We drove by this open field not too far outside of Reykjavik to see countless rows of wooden racks used for drying this traditional Icelandic food. There are racks of fish (cod, haddock, and saltwater catfish) heads, tails, and other fish parts. They are dried for months in the north Atlantic winds that constantly blow across Iceland. Yes, it does smell nasty here.
